Why choose mesh instead of a smooth PTFE grill sheet?
The open grid gives small foods support while allowing more flame heat and smoke circulation; a smooth sheet is better when maximum drip control is required.
Can the mat sit over an exposed burner?
No. Maintain safe clearance from direct flame and operate below the stated temperature limit.
How is the edge finished?
Mesh sheets are clean-trimmed or heat-sealed according to thickness; the edge is not a lifting handle and should not be pulled across sharp grate points.
